(More customer reviews)I have one small Emile Henry Flame pot which I ADORE, and really wanted to try more. This set is truly FANTABULOUS!!!! The flame piece is basically a SKILLET, which makes this apparently very specialized piece of cookware amazingly VERSATILE, as you can use it for anything you would use a skillet for - except you can microwave it, put it in the dishwasher, and in the fridge. Clean up is a breeze, especially if you don't burn things in it. I in fact messed up the initial seasoning process and burned the milk you are supposed to simmer onto the tarte tatin pan. It looked terrible, it burned for a while and created a thick black crust on one third of the pan. Not only it came off with (a fair amount) of elbow grease and a green pad, but after simmering some rice and water in the pan immediately after cleaning it off, and then boiling some water in it, there was no residue burn flavor in the pan whatsoever. I really do not recommend doing that, in fact next time I season a new EH (which I certainly will, LOL!) I will definitely use water and rice instead of milk... but hey - the pan looks and works fine! Yay!!!
I got the red tarte tatin set, and the pan does turn a burgundy color when heated (which I have never seen in my other EH flame pot, which is black), which is normal and really fun to watch, but it goes back to normal once cooled. The pan is is scratch resistant, much lighter than our cast iron skillet, and cooked eggs to perfection! I can't wait to braise meat, make quiche, and well, tarte tatin in it! Among many other things, I am sure. Oh yeah, and I (a rather unremarkable cook until very recently) can make some pretty tricky pan sauces from roux on my other EH Flame, so I am sure this one will be great for that too. Just so you know, the accompanying flat dish is NOT stovetop safe, although it may be oven safe - I am not sure, so I suppose I'll be emailing EH to ask about that one.
