(More customer reviews)Such mixed reviews on these pans!I had to order these twice because as another reviewer stated..lousey packaging.They arrived damaged.While Ihave not noticed the nonstick coming off, I do have to agree that these are not a good 5 year pan.They are poorly balanced, that meaning the handle is heavier than the pan and it will not sit flat on the burner, everything you cook slides toward the handle. I'll continue to use these until I find a replacement....then out they go!

(More customer reviews)I've owned this pan for about two years ... it's simply wonderful. The Calphalon Commercial line is the top of the line, just like the Professional, but with stay-cool handles. The thick, sturdy aluminum heats up quickly and evenly, and goes from the stovetop to the oven up to any temperature.
My favorite dish to make with this pan is a large omelette for two to four people. You saute the onions, etc., until carmelized, then add the whipped eggs, top it with diced tomatoes, basil, oregano and cheeses, then broil at about 450 for a couple minutes until browned. Simply wonderful!
I also cook stir frys, poach fish, bake casseroles, and brown meats in this truly Everyday Pan.
Now, for the issues: As with all true Calphalon products, you can not put hard-anodized aluminum into the dishwasher. It will damage the surface, leading to pits and discolorations, and void the lifetime warranty to boot!
Second, this is not a nonstick pan. If you want nonstick, buy Calphalon Commercial Nonstick, the best ever made (The Commercial nonstick line has the more advanced LRS3 coating versus the much less effective LRS coating on the cheaper Professional Nonstick II line).
To clean, simply buy a Dobie pad or its equivalent. For the tough stuff, I find a little Bon Ami or Dormond cleaner does the trick without too much effort.

I use these pans multiple times a week, mainly to make eggs "sur la plat" for breakfast or a light meal.Heat pan on the stove top, add butter or oil and (optionally) saute a small amount of onions, peppers or a few spoonfuls of almost any leftovers.Add 1-3 eggs (crack the eggs into a small dish first if you want to be extra careful not to get broken yolks or pieces of shell), and salt, and cook without stirring until whites are beginning to set.Finish by (optionally) topping with a little cheese and then broiling or toasting in a toaster oven until done. This is super easy, easier to do than to describe! Remove from heat and eat right from the pan.Remember the pan is hot, you might need to set it on a potholder at the table. I'm sure these pans would be good for all sorts of single serving dishes, including tapas of course.

(More customer reviews)I purchased a two pack of the 8 and 10" skillets from Macy's this past summer. All my pans work great. I find they are a bit like cast iron.Once they heat up (on medium), they retain their heat and cook evenly. I use medium heat, and can often get by with med-low. No warping or flaking yet. (The key is to not use any more heat than necessary - excessive high heat can ruin most skillets) I also got a griddle which is the Calphalon One Infused Anodized - their top line. I love it as well, and would purchase either again.I went mostly with the Contemporary line due to lower price. Be sure to read the packaging to see what line you are getting, as they have several lines out there.There is the 'infused anodized' and the 'hard anodized', nonstick and without the nonstick, etc.

I have enjoyed the even-heating characteristics of the heavy anodized aluminum, the ease of non-stick cooking and have always been careful to use nylon or wooden cooking utensils with it.Despite my care and Calphalon's reputation for quality, the non-stick coating has partially flaked off the bottoms of nearly every piece.I can't understand why one should spend so much on cookware that will last only a few years.I have replaced it with Cuisinart's Multiclad Pro Stainless...yes, it's expensive too, but without a coating that will someday end up in your meal.I can not recommend non-stick coated/infused cookware of any brand or technology.

(More customer reviews)First, I find it funny how this pan is advertised as "nonstick". If there's anything that the food sticks to, it's this "pan". After only 2 weeks of using it, it looks way worse than Tefal pan I used for over 2 years. If anything this "pan" can serve as a nice demo for introductory physics course on the strength of electromagnetic force of "sticking". Moreover, on the bottom of the pan it says "easy clean nonstick". Again, false advertising at it's finest. The only time someone would have to be forced to clean it is as some form of ultimate punishment for heavy crimes.... like genocide. Second, it's pain to get any food off it once it sticks - because when it sticks - oh then it REALLY sticks. To top it of, even the bottom of the "pan" after two weeks looks like it has been throughout the nuclear apocalypse.

(More customer reviews)I like the pan -- except I wish it were deeper.I was trying to replace a Farberware Millenium 10" pan that was 3.3" deep.The product description said this was 3.6" deep.It isn't.I like to use the pan, not just for omelettes, but for anything that needs to be sauteed and then cooked with a lid.I can't do it -- too shallow.

I decided to keep it and not return it, although I am having second thoughts due to the high price.The nonstick surface does work great, and the glass cover is great.

(More customer reviews)This pretty well completes my collection of Chef's Classic cookware.It arrived nicely packaged and undamaged.I have a small range so I particularly favor this pan over the long-handled 12" skillet with helper handle.Cleanup is also easier since the pan, without the longer handle, will sit flat in the sink.

I continue to believe that, other than All-Clad (USA), Calphalon Contemporary (China), and Anolon Advanced (Thailand), there is no better brand of stainless steel cookware.The reader should note that the first 3 have an aluminum core wrapped by stainless on each side and, unsurprisingly, each is far more expensive than the Cuisinart Chef's Classic line, with its heavy aluminum bottom disk.

This pan, at $24.95, is a bargain that will not last much longer.It should make a wonderful Christmas gift to the most discerning of chefs.

Farberware Millennium Soft Touch Stainless-Steel 12-Piece Cookware Set Review

I HAD happily used heavy gauge, aluminum, non-stick (Teflon... coated) cookware for years. I recently read "several" E-ALERTS, about "ALL" non-stick cookware being strongly linked to cancer... (do a Google search on "non-stick cookware cancer" (sans "quotes"))! BAH HUMBUG!

I proceeded to search for the best "safe" cookware-
Bare aluminum cookware is VERY UNHEALTHY!!!
Cast iron does not heat evenly, heavy, and hard to clean...
Bare stainless does not heat evenly, burns/sticks...
I already had some old Farberware "Classic" stainless cookware, with a thin/bare aluminum clad bottom. So-so!

After reading other reviews- I finally decided to purchase the Farberware "Millennium" 12 piece set. These have "Thick Clad" aluminum bases, that are stainless steel encapsulated.

What a joy- "after" some learning curves...!
Everything cooks sooo evenly, to the outer edge! Covers fit tight... Handles stay cool...! Oven safe to 400.

1. At first- Everything I cooked burned to the bottom. I now use my old normal cooking heat, with 1 to 2... less numbers..., on my GE electric range.
If what I cook, may stick- I first "season it" (wipe on a little Canola... cooking oil/PAM high temp spray, "before" I cook. If it's a "pre-heated" pan, you need to pre-heat, a little longer. I NEVER use High (overheat!)!- Warps, and abuse voids lifetime warranty! I season it "just before!" (or it will burn/stick to pan), I then quickly put the food in. Cooking/burning meat..., over 200 degrees causes carcinogens (cancer) to form!!!

2. Stainless is chemically safe "if" you don't clean it with anything too abrasive (rough scouring releases nickel... into food!- You can taste it!).
I visited the Farberware web site..., and adapted some of their their cleaning suggestions.-
The trick to easy cleanup- is to start with a very clean pan!
First I wash it normally (like non-stick cookware). I scrub it with the ScotchBrite "Dobie" non-abrasive cleaning pad. If I still detect "any" residue- Then I put some water in (1"...), with 1/4 cup of vinegar (I use white). Now I let it boil, until it appears clean (usually just a couple of minutes). Wash/scrub it again, and "TOWEL DRY!" ("air dry"- leaves mineral deposits, that food will stick too).
"Squeeky Clean", and ready to go, for the next time!

GREAT CLEANING TIP"S"!- If you have ANY burned on food (any cookware, BBQ grills...).
a. Mix baking soda in a thick hot water paste, and cover bottom. Cover...,& let stand 24hrs...

b. Mix a little water (thick paste) with Comet cleanser. Rub it on, & then put it in a sealed plastic sack/garbage bag, for 24hrs. It will then easily wash clean! Works great on ALL pans/BBQ grills!

Swiss Diamond Fry Pans Review

(More customer reviews)The problem with many reviews is that they are written in the honeymoon period after the purchase. I bought many pots and pans by this manufacturer. I bought this 10 inch frying pan almost a year ago and I have used it almost every day. It still works, but here's the problem - this type of surface is funny, at first it's like all teflon pans, totally slippery and it is very, very scratch resistant, but after a while no matter how well you clean it, it will develop a hard layer of oil/carbon and will become not much different than a poor to middle of the road seasoned cast iron pan. If you don't believe me, buy it and run it through about 100 cycles and you'll see what I mean. As far as the many other Swiss Diamond pots, casseroles, etc. I have purcased; I give them my highest mark, but keep in mind that any of these that gets used a lot and has oil on it will develop this layer of carbon which is impossible to remove. To their credit, the manufacturer actually warns you of this with the instuctions, and that you must not let the oil get burned on. My experience after 200 thermal cycles is that keeping that from happening is impossible. Maybe I wasn't religious enough in my cleaning at first, but once the process starts it will slowly cover the whole bottom of the pan no matter what you do. I use as much oil and butter in this pan now as I would on stainless or cast iron.Good luck

(More customer reviews)This griddle is more than heavy enough to conduct heat properly while being light enough for my slightly arthritic hands to handle safely. I have a ceramic cooktop and the manufacturer recommends only stainless, copper or glass cookware. It was difficult to find a griddle for pancakes, particularly for a reasonable price, and this griddle fills the bill nicely. It cleans up easily with hand washing but comes out nicely when put through the dishwasher.
