Joyce Chen J21-9964 Traditional 14 Inch Non-Stick Flat Bottom Wok Set Review

This wok lasted about 3 weeks before the non-stick coating started to flake off. It is now unsafe to use for stir-fry. I still use it to boil water for a steamer, but that's it. Worthless junk that I would NEVER buy again, and I advise anyone considering one of these to not make the same mistake that I did.

Joyce Chen Burnished Bamboo 5-Piece Utensil Set Review

Joyce Chen Burnished Bamboo 5-Piece Utensil Set

After two plus decades, I finally decided to replace my wood utensils.Though they had served me well, they were now cracked and splintering.

I was considering nylon or silicone utensils to replace them, but about the same time, I had purchased a bamboo cutting board and really loved it. So I checked out bamboo utensils and found these very nice and reasonably priced tools.

First, they are great with all types of cookware, whether traditional or nonstick. And the burnished bamboo surface is very tough. It doesn't mind high heat or the dishwasher.

I also like the bamboo container. It's small enough to place anywhere in the kitchen.I have on set by the stove and another on my prep table.

The only thing I wish it had was a deeper spoon or ladle for serving.

Product Description:
Turn to this set of two small steamers for delicious, flavorful cooking at home. Steaming not only preserves vitamins and minerals in foods when cooking, but it also allows for cooking with little or no added oils or fats for healthier results. Measuring 4 inches in diameter by about 3-1/2 inches tall, the steamers work well for cooking or reheating dim sum and can accommodate a variety of different vegetables, seafood, meats, and fruits.
To use, simply add food to the steamer, cover, and set the steamer in a wok or other pot containing boiling water. Steam enters through open slats in the bottom of the steamer and remains trapped inside thanks to its secure-fitting lid. The bamboo steamer effectively absorbs condensation, so water won't drip back down onto food--no need for soggy, mushy vegetables. For Asian-style steaming of dry foods such as breads and dim sum, line the bottom of the steamer with parchment paper or cabbage leaves to prevent sticking. Once heated and with the lid in place, the steamer can also be used as a convenient container for keeping food warm for up to a half an hour, plus its beautiful design makes it a nice choice for use as a serving piece at the table.
Handmade from 100-percent naturally sustainable bamboo, the durable steamers come securely assembled with bamboo pegs and bamboo lacing, and their tight construction effectively traps steam for fast, efficient cooking. Before using for the first time, rinse the bamboo steamers and lids with cold water. After each use, wash the pieces with hot water and a brush, if necessary. Use water only to clean--do not use soaps or detergents, and allow the steamer to thoroughly air dry before storing. The bamboo steamer offers a great way to cook and serve Asian-inspired foods with authentic flair. Recipes and instructions come included.

Joyce Chen Pro Chef 8-Piece Carbon-Steel Flat-Bottom 14-Inch Wok Set Review

Joyce Chen Pro Chef 8-Piece Carbon-Steel Flat-Bottom 14 inch Wok Set
Average Reviews:

You can buy a carbon steel wok for around $30, so why spend so much more?

The wok body is heavy but not too heavy. Professional Chinese chefs generally prefer carbon steel, though some like cast iron. Having cooked on both, I like the responsiveness of carbon steel.

The size and shape of the wok are nicely suited for home use. I use it on a gas range and prefer having the flat-bottom style vs. using a wok ring, which raises the wok up away from the burner and lets the wok tip a bit more. (If you have an electric range, definitely choose a flat-bottom wok or else it can't get hot enough.)

Not visible in the photo are the concentric rings around the the outside, giving the wok at least the appearance of being made of spun (vs. stamped) steel.

The wood handles are beautiful, smooth maple - and are solidly attached to the body of the wok. The glass lid is a little too upscale for a wok - it seems to defy the peasant roots of the vessel. I would have been perfectly happy with a tall metal lid but don't have any real complaints about the glass one, though the thin metal rim looks like it might dent easily.

Reminders: Don't forget to season the wok before you use it. Wash with hot water, no soap. Dry on the stovetop to prevent rust.

Lastly, I'll add a recommendation for this book for choosing, seasoning, and cooking in a wok. A great read beyond the recipes it offers:

The Breath of a Wok: Unlocking the Spirit of Chinese Wok Cooking Through Recipes and Lore

Edit: 6/23/06

After using this wok for a year, the non-stick coating has degraded. The wok smokes quite heavily when it is being pre-heated without oil, much like a cast-iron skillet.

Also, the coating on the bottom of the wok where it contacts the burner has peeled off and there are large areas of rust and carbonized material.

Therefore I can't recommend this wok. It is simply not durable enough. I guess I'll go back to a non-stick skillet.

---------------------------

I got this wok with some hesistation because I've had bad experiences with nonstick woks in the past due to the nonstick coating coming off. I'm happy to say that the Excalibur coating on this wok seems very durable (it was the reason I got this wok).

I've made the standard Chinese dishes with this wok and it performs well. The size and shape of the wok is perfect and the dishes come out great.

Some people question the practicality of a nonstick wok. Having used the traditional carbon-steel woks before, I can definitely say that you have to use at least two to three times the oil in one of those things as in a non-stick wok. There's a reason why most dishes in a Chinese restaurant, even the authentic ones, come out fairly oily. Being health-conscious myself, I would rather sacrifice some taste than use an excessive amount of oil.

In any case, unless you must have 100% authentic Chinese food (not that it's possible given how cooktops are designed in the West), I would recommend getting this wok over a carbon-steel one. You won't regret it.
