NOTE: This unit is also sold as the Max Burton 6000 for half the price. My recommendation applies to the Max Burton unit as well.

This is our first induction unit and we love it. I think this is a remarkable technology and can be had so cheaply, I don't know why everybody isn't buying these.

1)Very intense heat when you want it -- better than a high powered gas stove for stir frying or steak on cast iron. This unit is quite powerful rated at 1600 watts.
2)Instant and precise temperature controls -- comparable to gas.
3)Digital temperature indicators -- far better than gas.
4)A timer!! Fantastic. So you can put something on and plan to have it stop cooking in 10 minutes. No range does this that I know of.
5)MUCH less wasted heat. With a conventional range, 50-60% of the heat is just heating up your kitchen. With induction, ALL the heat goes into the bottom of the pan so much less is wasted and your kitchen stays cooler. That is also why induction provides such intense heat for frying.

A couple of other comments.
-- Don't get bamboozled into buying expensive clad stainless for compatibility with induction. There are very inexpensive disk bottom stainless saucepans pans that will perform extremely well -- shop the restaurant supply houses. Johnson-Rose is one brand I like and they're dirt cheap. Arguably disk bottom is BETTER than pricy clad pans that try to spread the heat up the walls of the pan. You usually don't WANT the heat on the sides. Another thing that works great on induction is your old reliable cast iron.

-- I cannot tell if there are real performance differences between induction brands. People seem to like the $500 Viking induction cooktop, but Viking customers are notorious for wanting to justify all the money they spent. The Viking's selling point is a lot of wattage, but the $105 Eurodib we own has virtually the same power rating.

The quandary is what brand to buy -- and I suspect for the most part you can't make a bad choice. I've shopped 110 volt induction cooktops extensively and the differences seem to be relatively slight. They all have mostly the same features and all seem to get good reviews. Some are more powerful than others (this Eurodib is 1600 watts supposedly) but I'm not sure that power really means much for home use because they will all heat up a pan to 400 degrees. And most people don't need searing heat most of the time anyway -- most of our cooking is at the moderate temps. So the most important feature may be a wide gradation of power and temperature settings.

I've had this skillet for 4 months, and it is growing on me. I typically cook using cast iron or steel skillets.

If you have an induction range, (e.g., I have the Viking Induction) note that the skillet does not contain much inductive material, and it heats considerably slower than carbon steel or cast iron. On the other hand, that is convenient because you do not want to accidentally ruin a nonstick finish by overheating the pan.

There are two design shortcomings. First, the sides of the skillet are too vertical. It is not possible to "toss" well while sauteing. If you only "stir" this is not a problem. It would be better with more angled sides. The second shortcoming is that the handle has a small, awkward loop, which is hard to hang on a pot hook with any other pans.

The strengths are that the skillet is solid and well-built. The nonstick finish is well attached, and looks like new after four months. The nonstick finish is slightly textured which helps distribute oil.

We bought this on good faith, never having used Henckels cookware before. It's the perfect saute pan (for us): it has the most comfortable handle I've ever held; it has nice steep sides so flipping things is a breeze (no danger of something flying out); it's non-stick yet still dishwasher-safe, and it was a reasonable price. I will definitely buy more Henckels cookware -- absolutely.

Fagor is the least expensive brand that I am aware of which also has the 'modern' features desirable in pressure cookers. To learn more about pressure cookers and what is desirable go to missvickie.com (a non-commercial site devoted to pressure cooker enthusiasts.) Some of these features deal with safety, e.g. you don't have to worry about plugging the steam escape with Fagor. Fagor cookers also reach a pressure of 15psi (which is important.) Unless a brand advertises that they do reach 15psi, assume that they don't. I suggest getting an extra gasket when you buy the item as you will need one at one point (they don't last forever). I must also compliment the company on its service. I bought this item, and sent in a rebate form (for a free stock pot). They sent me a nice paella pan by mistake. I was satisfied, however I called them to make sure that there was no mistake. They answered the phone right away (without the common maze of annoyingly slow and complex menu options.) The woman I talked to was very personable. This woman checked on what happened, called me back, and told me that they would also send the stock pot to me, and for me to go ahead and keep the paella pan.I will update this if needed as time goes on, as I have more experience using this item.

The above review (one star) is very misleading as it does not rate the All Clad product. Rather, it rates both an inferior product and the dealer who sent it to him/her. All Clad is a wonderful product. I have some that is over 25 years old and still looks new. Additionally, the shiny stainless is compatible with induction cooking for the green minded cook.

I've had this set for over 4 months. I bought it from QVC's site. The pots/pans are beautiful. They look real nice and a heck of a lot better than your standard pot/pan set. They have a decent heft to them. It's very convenient how they designed the lids to be able to hang on the pots/pans themselves. I cook real food at home, not your boxed/canned stuff (hamburger helper, stouffers, etc...). Last night I made a nice risotto, roasted brocolli and seared salmon. The night before a chicken parmigiana, spaghetti w/ragu and a prisciutto-wrapped roasted asparagus. The food always turns out nice and as you would expect.

The finish on the inside is a glossy stainless. I do not have sticking problems. I use the large stockpot to cook pasta a lot. It boils the water a lot quicker than my old, crummy pot. They are all easy to clean.

Now, on to the bad part. The manual clearly states these are dishwasher safe, but they recommend you hand wash them. The reason they recommend this is that nice finish will, and does, start to wear off after a few washes in the dish washer. A couple of my pots are to the point where it's hard to wipe a towel over the outter surface because it gets snagged on the coating that is wearing off. It went from a very appealing, dark grey, smooth finish to a light grey, spotty, rough finish. It functions the same and the inside is still perfect, but I didn't know the finish would wear off like this by running them through the dishwasher. I'm going to knock off a whole star for that alone.

The small pot's handle causes it to lean very slightly so the temperature is different on one side of the pot compared to the side opposite the handle. I use a glass-top stove, so maybe this wouldn't be an problem with a gas stove. It hasn't been a major issue, just an observance.

Would I rather have finished out my pots/pans with All-Clad? Yes. I started collecting some All-Clad, but didn't want to dish out $1,200 for the rest of what I wanted. Given the price, I decided to give these a shot. I'm a huge Tyler fan and use his recipes often. The Florence set is much thinner, lighter and not as heavy-duty. I see replacing these in probably 5-10 years tops. If they were All-Clad, I could see it lasting the rest of my life (I'm 30). I will not be replacing these with another Florence set. The finish is too much of a disappointment. So, 3 stars. For the average home cook I think these will be just fine. Just don't put 'em in the dishwasher... Ever... I hate handwashing...

When I got married, my husband and I wanted to get really good cookware. In particular, we want an induction cook surface, so we it had to be induction-compatible. At first, it appeared that All-Clad was the only option, and man, is it expensive! My parents discovered the Henckels Classic Clad line and I was a bit skeptical. I love my Henckels Twin Cuisine knives, but knives are not pots. Well, one grasp of the All-Clad handle and the Classic Clad handle and I was sold on Henckels! These pots are heavy and All-Clad's handle is concave (dips inward) and is painful for me to hold. The Classic Clad turned out to be a wonderful investment. The pots are very easy to clean, work wonderfully on induction, and heat food very evenly like clad cookware should. It doesn't hurt that they are also beautiful 18/10 stainless steel (I can't wait to have a pot rack to display them!). And the price tag is a lot easier on the wallet than All-Clad. We helped my brother-in-law register for these after they didn't receive any of their All-Clad, and they received every piece of Classic Clad they asked for!

A tip for anyone who owns expensive stainless steel pots - never use steel wool to clean them! You'll irreparably destroy the surface. Soak, be patient, and try toothpaste instead (a tip from Talking Dirty with the Queen of Clean).

I had read other reviews on the stand alone cooktops for this brand and the others prior to my purchase.When it arrived I tested it out for myself.It would not operate with my cookware which is expensive but not magnetic.It was a good thing I purchased it with the magnetic pan and lid which were made to work with the cooktop.The pan was heavy and made well enough.

My first experiment was to boil water and to try out the different heat settings.I noticed when I boiled the water that although the cooktop had two circles on the top which made me think that the heat would come from the outer circle if I turned up the heat, this was not the case.Turning up the heat makes the magnetics in the system whirl faster, but the heat source comes directly from the smaller ring.The pan burns hotter where the small circle is on the cooktop.

My next experiment was with food.I sprayed cooking oil inside the pan coating the bottom and the sides.I turned the heat to medium and heated up partially frozen mac and cheese that I had taken out of the freezer and had nuked for 1 minute to get it out of it's container.As the mac defrosted I added in some previously cooked hamburger from the fridge, frozen peas and frozen corn.I noticed that the mac was sticking to the pan so I added about 1/2 cup of cold water.I put the lid on the pan to help things heat up.

When I saw the liquid start to bubble, I took the lid off and stirred.The bottom was still trying to stick. It did not heat evenly and I had to stir the food towards the center to get it all heated.End result - food did not burn, heated up quickly, but I had to shift food to the heat source to get it hot.I think a teflon coated pan would work better.

The inner cooktop was hot when the pan was removed but it cooled down quicker than my glass top stove.I think with a little practice I can get more comfortable with it's use.I will be taking this to school with me to teach my students cooking on Fridays so they can apply their math and reading skills.I hope they will get excited about the science of how it works as well.

I have been using this cookware for a few weeks and I am very happy with them.We have a glass top stove and they are very flat on the bottom making for excellent heat conduction.Water boils twice as fast as the old pans we were using.

They go in the dishwasher and come out clean and shiny.We'll see how they look over time, but so far, they still look like new.The glass tops have a metal edge around to protect them.I love being able to see my food without removing the top.

The only complaint I have is that the insides stain a little bit when making tea, but it's no big deal.

We purchased the CIA Masters 10 piece set, plus the 12 inch frypan and a wooden spoon after researching the Viking and All Clad Copper Core sets. We were able to visit stores in our area to handle the Viking and All Clad sets before purchase - we were not able to see the CIA Masters set before purchase.

In terms of weight, the CIA Masters set is similar in weight to the All Clad regular stainless set. The handles have two rivets and have the All Clad grove with the Viking curvature. The lids are slightly domed similar to the Viking set.

In terms of the copper layer - we compared the CIA set against the All Clad Copper Core. If you look at a piece of All Clad Copper core you will see a copper layer that is about 1/8" thick and very easily identified. If you look at a piece of CIA Master cookware, the copper layer can hardly be seen. Given the price of copper these days, my guess is thisamount of copper in the CIA cookware is part of the price difference to the All Clad Copper Core set.(10 piece set of CIA cookware is $499, 10 piece set of All Clad Copper Core $1200.)

The set arrived from Metro Kitchen in three days and was beautifully packaged.

So - why won't we recommend the set? First -you need to use silicon or wooden utensils with this set. Do not use metal utensils.The stainless steel is very very soft and the pans scratch easily. In fact, the very first time we used the set we made large, easily visible scratches on the outside bottom and inside just from making risotto. (note -- we have other stainless steel cookware where this is not a problem.)

Second, the golden rule when using stainless is to use low to medium heat. Higher temperatures cause a reaction with stainless steel which cause a bluish / brownish stain. The first time we used one of the frypans this marking appeared despite the low heat we used.

We haven't had any problems with food sticking (that pretty much a function of knowing how to cook in stainless anyway...) - but we can't honestly say the cookware is any better than the Emerilware or Cooks Essentials set we had previously.

Frankly we wish we had not paid $500+ for cookware that is "just okay" and that is going to show wear in a very short time. The Viking or All Clad set would have been a better choice.

This cookware does work on induction cooktops.Before I bought it I went to the manufacturer's website a watched a video on this line and it indicated that even though it was cast aluminum there is a diffuser plate in the bottom that allows it to be used on induction cooktops as well as others.So I went ahead and bought it and they work beautifully on my induction stovetop.They have a nice weight on them, which I love, and the price is decent considering that for non-stick induction cookware they tend to be abhorently expensive.

The glass on our old cooktop broke (don't ask), so spent a lot of time figuring out which to get. Finally sprang for an induction type, but the problem with those is that only cast iron or stainless steel cookware will work.

So, researching the pots, we were shocked at the cost of stainless steel, but this set was certainly not the highest priced. Having faith in good ol' Amazon, we knew that if they did not turn out as advertised, we could return them.

To our delight, these pots and pans are not only beautiful, but solid and work like a charm. The handles are comfortable to use and are handsome too, and the set has a piece for just about any use.

They are heavy, but the larger pieces have handles on both sides to facilitate picking them up. My wife feels they are almost too gorgeous to use and get dirty with nasty old food. :)

They look even better than the picture, which is something.

That is a lot of money for six pots, pans and covers, but once we saw them, we feel they are definitely worth it.

I like this set.It is very good quality for the price.I bought it because it is induction usable--it does not say that in the ad, but I had seen this in a store and bought a single pan to test.
The lids are very nice fitting, with a hole in them.I wish the lids fit the pans too, but they do not.
This is not super thick steel for many reasons.Reasons include heavy weight, a pan that will not cool down (especially critical for induction), handles stay cool if thinner,and cost.I do not find any of the items flimsy at all.It is somewhat thin feeling but very amply sturdy.It does not bend on me at all--even trying.I did not try a hammer on it, but do not find a reason to.
I think this is a good deal for what you get.

Really beautiful on the stove. The shining, sloping sides add a very elegant and sophisticated air. Extremely quick and even heating. Handles stay cool. Just all around a great cookset! We almost didnt get it for 2 concerns: we were concerned the handles would get too hot (they stay cool!) and difficult cleaning ..we were looking for non-stick (these still clean quick and easy with a swipe of a brillo pad). We've since realized that non-stick would wear out in 5-7 years but without it...these should last almost forever!Great purchase.
