(More customer reviews)I just got these knives yesterday, so these are mainly my initial impressions. The packaging is not that great. I don't know if most knife sets come like this, but I was a little surprised. Everything was wrapped in cheap plastic and had some manufacturing residue on it. The block had bits of glue in random spots that had to be cleaned off. I cleaned the block and washed all the knives and everything looks good. There are a few hairline scratches on one or two knives, nothing major. On each knife, it says X30Cr14 which I believe has something to do with Chromium. It also says "D10", "Rostfrei", "BergHOFF", and gives the length. I can't tell where these knives are made. I looked all over the packaging to no avail. BergHOFF is a Belgian company so take that for what it's worth. I even looked on their website and there is no real info I could find.

The knives are solid and heavy feeling. With the counter balance they are a pleasure to hold. You can hold the knife with one finger. Just put the finger on the bottom near the middle of the handle (right side up) and it will balance nicely. They come nice and sharp, but make sure you have a way to sharpen them since there is no steel. I'm not an expert on knives - so I can't tell the difference, but these are forged, not stamped. Berghoff recommends that these be hand washed. I'll update this review with cutting performance and durability later.

Overall, these are some very nice knives, and I recommend them.

The edges have remained sharp with very little sharpening and the wood handles have maintained their beauty. I do not place them in a dish washer because of the wood handles and an occasional coating of gun oil keeps them in fine shape.

I damaged the carving fork and phoned Chicago Cutlery to order a replacement. They said they don't manufacture it anymore. So I found this 25 piece set to replace my older set, for only $29. You can't get a better deal. The knives are sharp with an amazing selection for every use, the knife block keeps everything handy, and the additional utensils are worth another $10. Whatta deal!

(More customer reviews)After researching knives for a while, I chose this set.For the price, and all that you get, who could ask for anything more!The weight and balance of these knives is great.They are very sharp to start out with, and have maintained a nice edge.If you are looking for a great set that will not set you back $500-$1000 or more, this is the one.To be sure that any knife will work for you, go to a store and hold different makes and models.If the knife is not comfortable in your hands, you won't use it.As I said, these knives are great for me! My favorite is the 8" Chef's knife.

Now to the negative...
The block takes up alot of counter space, so you may consider the 17 piece set if space is an issue.They are made in China, but they are forged from German high carbon no stain steel.The steak knives that come with the set are just okay, but the set is complete and I don't need anything else.

I would recomend these to anyone looking for a new cutlery set!Enjoy...

(More customer reviews)To a professional chef, no kitchen tool rivals a great set of knives. When learning my trade in Paris, France, I used only the finest Sabatier knives. Later in life, I was fortunate to make a Swiss Miss a Mrs. Typically frugal and practical... and from a family that has had the same Restaurant Bauernhof for centuries... so, when my prized Sabatiers were lost in transit, she replaced them with a more economical (stamped not forged) Swiss brand, R. H. Forschner by Victorinox.
Suddenly, this 70 year old retired chef cut through decades of knife prejudice... the sharpness, balance, thin blade and heft brought joy to my kitchen again... and for a fraction of what I would usually pay! It has been several years since my first Forschner and it is just as good as the one I just purchased.
Last fall we visited Oberlunkhofen, Switzerland, where my mother-in-law continues as chef of the family restaurant at 82 years of age and her 86 year old sister-in-law is the waitress. Her wooden handled knives were of excellent quality but could no longer pass the NSF rules. I purchased a set of H. R. Forschners for her at a Swiss wholesale restaurant supply house... at a price higher than we could have gotten them on Amazon.com! Not only is she a cutlery pro, but she values price and practicality even in gifts. Now she thinks kindly of me as she cheerfully slices through each day.

(More customer reviews)These are our daily use knives, particularly the paring knife, and steak knives. We've owned them about four years.

They are beautiful, clean up well, but occasionally do need to be polished when water or rust spots appear. We don't dishwasher the chefs or carving knife, but we do dishwasher all of the other knives.

Stainless steel doesn't sharpen to as keen of an edge as some other high carbon steel knives, but then the high carbon knives discolor more readily. That is the trade-off.

As a result, for heavy veg prep, we'll grab the Global chefs knife. For raw meat, we prefer the Shun. At the dinner table. for roast or turkey carving, the Henckles outperforms the included knife.

The scissors come apart for easy dish-washing and sanitizing and cut chicken bone with some effort. They stay sharp though, we've assaulted many a double walled cardboard box with them and haven't deemed it necessary to sharpen them yet. The honing steel is about all it takes.

In hind sight, while we've collected particular knives for particular work thus obviating the need for the two largest knives in the set, we'd still buy this just to have a matching counter top set.
