(More customer reviews)The board is the right size for carving up a whole chicken and the "moat", while modest in width/depth, kept the counters clean.Another plus is that it is reasonably light for its size.The one small surprise for me is that the wood is so very dry.It soaked up two very generous applications of mineral oil very quickly.If it doesn't come with oiling instructions, you'll still want to oil it as soon as possible and perhaps with multiple applications each spaced out by a day.

New comments:
After seasoning the board, hand washing, and 6 months of happy use, the board split along a glued joint. This happened after it had been sitting on the counter for a week under the weight of a homemade loaf of bread and a medium-weight glass cake cover. My best guess is that the board had become just slightly (and most imperceptively) warped and the constant distributed weight provided enough stress to crack apart the glue overnight -- 6+" of it! I know nothing about woodworking but I doubt that seasoning alone can strengthen a joint or prevent minor warpage. So I'm lowering the product to a 3 star rating.

1/17/08:Maybe I need a life but I just thought I'd add that there has been no further splitting after 1.5 years of use.I guess nothing is perfect and I certainly still enjoy using the board very much.

Chicago Cutlery Metropolitan 10-Piece Knife Set with Block Review

(More customer reviews)I am writing this review to affirm and expand upon the earlier review posted by NJOY. These knives, if cleaned in a dishwasher, will indeed rust immediately.

I purchased this set in May 2007 as a gift for my wife. Both of us lead busy lives and were happy to come across this set, which was strongly recommended by Consumer Reports and had packaging touting the knives as "dishwasher safe." We sadly found the packaging claim to be a baseless marketing ploy, and have lost faith in Consumer Reports for not exposing this obvious flaw.

A complaint to Chicago Cutlery yielded a response saying the knives "are made of high carbon stainless steel which unfortunately does rust" and that "to avoid rust, the blades have to be kept well oiled." It should be noted that there are no such disclaimers or instructions in the set's included Care Guide. Also, despite the company's Lifetime Guarantee promising that "any piece found to be defective will be repaired or replaced at no charge," the company only offered to send some oil to help in rust removal.

I strongly advise against purchasing this product or any Chicago Cutlery items. Instead, find a manufacturer who stands behind their product and engages in honest marketing.

They are absolutely HUGE, and not at all practical for the common household. The would not even fit in our drawer. They never made it out of the package. i sent them back and I was very disappointed. Dimensions of the knives should be included in the description - (Note for web content managers). These knives are nearly 2-2 1/2 inches wide.

(More customer reviews)I've used this set for several years now (mine is the Insignia Matte Series) and have been very pleased with the overall cutting ability of these knives.Even though I also own Global and Shun kitchen knives, I find myself being drawn to the Insignia knives when I am in a hurry or in the middle of a large project.Although both the Global and the Shun have sharper edges, their price difference doesn't equate directly to the increased level of sharpness that you get.That is to say, yes Global and Shun knives are sharper, but they are not three to four hundred percent sharper all though their price difference certainly would suggest that.

Using my Insignia knives, I am able to quickly dice, cut, and slice through onions, carrots, chicken, roasts, etc.That said, there are several cavets that need to be stated.First, don't wash these knives in a dishwasher.It has nothing to do with the quality of the steel.I wouldn't wash my Ken Onion Shun Chef's knife in the dishwasher and that one knife costs as much as two whole sets of the Insignia.Second, these knives need to be honed regularly.A few strokes after every use makes a real difference.Third, after owning the knives for almost two years, Isharpened each of the knives on oil stones.These knives, like all knives will need tobe resharpened from time to time.The good news is that they resharpened quite nicely, a tribute to their quality.Since resharpening, they have continued to hold their edges.

Last, the balance of these knives is more than adequate.I also own the matching sanduko and have found it to be the best of the series.All though I am a bit of a knife snob, and although I would love to purchase a block set of either the Shun or the Globals, I can't justify it given that the Insignia's cut so well.My wife would really give me no end of grief if I threw out a perfectly good set of knives.And a good set of knives these are.

(More customer reviews)The santuko knife is the best knife I've ever owned. Of course this is because I cannot afford to spend $90 on a knife that I say this. If you want a good semi-precise knife set on a low budget this is pretty good. I do have to sharpen the santuko knife a lot but that is because I use it several times a day and sometimes on a glass cutting board. From what I understand that will dull a knife pretty quickly. Be careful,it's sharp, I've cut my fingers twice with this knife. The smaller knife is great for cutting open a bell pepper. Over all, I like this set. It's getting me though all the healthy home cooking I do. But I'll probably buy something a little higher quality in a couple of years.

The blades are nice and strong and sharp right out of the box.Spend a few seconds on each one with the included sharpening Steel and they just get shaper.There is only ONE thing that is somewhat bothering to me and most would laugh about this but when you place all the knifes in the storage block they don't line up perfect like the picture shows.After trying to rearrange the knifes you just can't get them to line up.This has nothing to do with the quality of the knifes and with me being extremely hard to please.This only bothered me for 5 minutes and I decided this set is WAY to nice especially for the price to let this bother me.They kind of make a rainbow shape when placed in the storage block so it looks ok.Like I said I am hard to please when it comes to quality of a product and this set pleases me.I have looked at many sets before purchasing this set and for only $129.95 I truly believe you will NOT find a better set.Maybe even for more money.I highly recommend you give them a try.

(More customer reviews)I have owned Global, Shun (ken onion series), Furi, Ran, Henckles, Wousthof, Chroma, Mac and most recently, got myself a Haiku.I cook professionally, spend my days in a professional kitchen, I have 14 sets of knives ranging from 3pcs to 8pcs sets.I love knives.

So, here is my review of these knives.Good utility knife set.Handles are big enough to fit in your hand, sharp enough to do "simple" cutting, blade is thick enough to stand abuse and they are very light.Rating, Price, quality and performance were all considered as a WHOLE.

Workmanship, I would say, it's excellent for a $4.00 knife set.I can't compare them to my other knives which cost 10x or 20x more than these.But, considering the price I paid for, they are great.I keep them by my side especially the serrated ones.

And I'm just sadden coz, people should know, there is no such thing as "stainless steal" or rust proof knife.They all stain.That's why never, ever put your knives in the dishwasher.Wash them by hand and dry them with a towel.Even with care, with age, you'll notice staining on your knives.Good luck.
